Indian Rice and Lentils with Raita

This vegetarian recipe is simple, quick, good-for-you and unusual. It’s well balanced and complete, with the rice, lentils, cucumber, yogurt, onions. It qualifies as a top recipe for me, most of all because it has a fabulous flavor from the spices–cardamom, cinnamon and cloves. My mouth waters thinking about it. We all loved it.
Note: add a cup more water than the recipe calls for with the rice and lentils, or it will stick on the bottom and dry out before it’s thoroughly cooked.
